    New blog post: Easy Baked Sweet Potato Fries. . This is hardly a recipe but features my secrets for getting perfectly crispy, evenly cooked sweet potato fries every time. . These babies are seasoned with @primalpalate’s Adobo Seasoning (because I can’t stop), but you can use whatever you want to season yours. . It’s been a quiet week on my end because I started a new job and have been commuting (a total of 2.5 hours/day in the car). The commute has drained me, but fortunately this week dear friends have offered to share their home with me so hopefully I’ll be back to sharing delicious food and more this week! . The recipe calls for their Adobo Seasoning, which really brings the flavor to the next level. If you don’t have the beloved Adobo, use your favorite spice blend to season them however you please. .     More often than not, this is what healthy eating looks like for me. Throw some veggies onto a pan to roast or into a skillet to sauté, add some fat and some seasonings, and cross your fingers that it tastes good (it usually does). . Here, I simply threw some chopped baby carrots, red onion, and frozen rainbow cauli from @traderjoes into a bowl and tossed with avocado oil, ginger, turmeric, coriander, cumin, salt, and black pepper. I spread it onto a pan and roasted at 400F for 45 minutes, tossing once around the halfway point. . I usually pair this with some kind of protein, but I was feeling rice on this particular day so I went with it. . I know that many people need to meal plan in order to eat well, but for me it’s a matter of stocking my fridge and freezer well and just throwing together whatever sounds good at the time. I’ve tried meal prep and it didn’t work for me. If it works for you, great! If it doesn’t, you can still eat well with little prep time. It’s just a matter of learning the lifestyle that suits you best. . What works best for you?
